Chocolate Covered Cherry Smoothie

The recipe title Chocolate Covered Cherry Smoothie pretty much tells you everything you need to know about this addictive smoothie. But what it doesn’t express is just how good this really is. It’s hard to define, and I don’t seem to have words for how much I love this smoothie. Suffice it to say, the sparkle in Tyler’s eyes and the way his face lit up when he tasted it, told me I’m not alone in my new addiction....

Creamy Blackened Chicken Pasta

I used to make a dish similar to this Blackened Chicken Pasta all the time because we just loved the spice and cream sauce combo. But over the last few years we’ve both backed off on how much dairy we eat, since we both feel better eating less of it. However we both still crave cream sauce dishes all the time, so I’ve really been experimenting to find some alternatives....

Gluten Free Chocolate Cake

So… a weird fact about me is that when I was a kid, I wouldn’t eat the cake at birthday parties if it was chocolate. And the same went for ice cream and frosting, if it was chocolate, I wasn’t eating it. I clearly remember standing my ground on a few occasions and refusing the cake, much to the adults’ mystification. I’d happily just eat the veggie tray rather than the chocolate cake – very weird behavior, wouldn’t you say!...

Healthy Huckleberry Frosty

Every time the temperature shoots through the roof, I find myself making a frosty! Last summer I was all about this Strawberry Watermelon creation, but this year I can’t get enough blueberries, (and now local huckleberries). This version is easier to make for year round enjoyment because it’s made with frozen berries, (whereas watermelon in January just isn’t quite right)! When I hear the word frosty, I always think of a variety of sugary drinks from childhood, (anyone remember Mr....

Kale Pesto With Vegetable Noodles

Kale Pesto is an unlikely deliciousness and it came about as many good ideas do – at Farmer’s Market! It finally occurred to me that kale could be used for something other than Green Smoothies . I asked one of my favorite farmers how she prepares it, and she said she makes pesto with it. Now that’s an idea I probably wouldn’t have ever had on my own! I tossed my pesto with Zucchini Noodles , but it’s good stirred into eggs as well....

Lake Agnes Teahouse Hike

The trail climbs through the trees to Mirror Lake before heading up to the teahouse. From Mirror Lake there’s a connecting route to the Plain of 6 Glaciers, where there’s another teahouse and you guessed it, amazing views of 6 different glaciers. Just before the teahouse, there’s a waterfall and several flights of stairs. Once you’ve reached the teahouse, it’s time to sit back and enjoy the views! It’s definitely worth it to hike around the lake, especially if it’s later in the day because the light is perfect for pictures from the end of the lake....

Norris Geyser Basin Loop

The Norris Geyser Basin Loop is a less traveled scenic hike in Yellowstone National Park. It shares the same trailhead start as Porcelain Geyser Basin so if you’re up for it, you can do 2 for 1! We almost didn’t hike Norris Geyser Basin. After all we were exhausted after a full day of site seeing. But so I’m glad we did because this loop is different from everything else we did that day....

Peach Sorbet

Easy to make, this Peach Sorbet is the perfect frosty summer dessert. Made from fresh peaches, this sorbet has so much flavor and only needs a hint of sweetener to round it out. From there, I added a touch of lemon juice and a dash of cinnamon to create a little depth. This sorbet tastes like pure summer, and it’s fruit-based, making it a healthy dessert as well. This peach sorbet is simple to make with just four ingredients....

Peanut Butter Dip

Easy to make in 10 minutes or less, this peanut butter dip makes the perfect healthy snack or dessert, but tastes decadent. It’s naturally gluten-free, and we love to serve it with assorted seasonal fruit. This healthy peanut butter dip is our favorite for Apple slices, strawberries, bananas, and grapes. This peanut butter dip is inspired by my friend Heidi, who makes it as a quick and easy snack. She made some one afternoon when she was over at our house, and we all loved it....

Ptarmigan Tunnel

Ptamigan Tunnel has a lot going on for just one hike – you have lakes, mountain views, a glacier, and a 250′ tunnel! This hike is located in the Many Glacier region of Glacier National Park, and it’s one of the most popular hikes. Skillet Lasagna With Butternut Noodles

This lasagna is just like the one my mom makes, but instead of the usual pasta, I’ve subbed in butternut noodles. It’s also conveniently made in a skillet, so there’s no layering involved which makes it just a bit easier. I’ve tried several versions of this lasagna with zucchini noodles and sliced zucchini, but they are alway a little watery, (but still really tasty if you want to go that route)....

The Inspired Ice Creams E

It’s here… and just in time for all things summer! The idea for this Inspired Ice Creams E-Book was formed in a coffee shop in Fernie BC while sipping a latte, and trying to warm up from a freezing torrential down pour. Maybe I was just trying to conjure up warmer sunny days in my mind, but all of a sudden I knew I was going to write an ice cream ebook for summer....

Vegetable Noodles

Today we are making Vegetable Noodles. It’s more of a how-to than a recipe, but you will find a printable recipe option at the bottom of the page. I first made vegetable noodles about a week ago, and I was surprised by how easy it was. I had seen the concept before but never tried it. I thought that it looked like a time-consuming task. I mean, who has time to be making vegetable strands when it is already 7:00p....
