When I first went gluten-free… I was lost, to say the least! I had just started this blog and was working on a cinnamon roll recipe when I realized I would need to make some drastic dietary changes.

Fast forward 12 years, and I have so many incredibly delicious favorites to share with you today. You’ll also find a few of my tips below for certain gluten-free ingredients I’ve found that make your dinners even better.

So, whether you’re new to gluten-free or you’ve ‘been around the block,’ I know you’ll find some ‘keepers’ listed below.

We are huge pasta fans, so finding a great gluten-free pasta was a priority. We’ve tried many brands over the years, but Jovial 100% brown rice gluten-free pasta has consistently been our favorite.

Delallo also makes a really good brown rice pasta that is almost as good as Jovial. For Lasagna noodles, we use Jovial or Tinkyada. If you can find Tinkyada lasagna noodles, they come perfectly flat and are a good size to fit into your baking dish.

Sheet pan dinners are a staple in our house because they’re both flavorful and easy! I like to use parchment paper to make the cleanup even easier.

My favorite fast way to get dinner on the table on extra busy days is to skip making a recipe. Instead, I add small cubed potatoes, thinly sliced carrots, and 1.5 pounds of sausages and chicken breasts to a sheet pan.

Drizzle with olive oil, season with sea salt, and bake it at 425ºF until done, and serve it. It’s plain, but still so good, and you can add a sauce if you have anything on hand.

There are easy weeknight dinners that everyone will love. The taco casserole, taco bowls (a fun take on tacos), and stroganoff are family-friendly favorites.

My burger bowls are all your favorite burger flavors piled into a bowl with a good amount of greens. They have been a consistent hit for me whenever I have company as well as the Instant Pot options which are a nice ‘hand’s off’ option.

The Easy Chicken Curry is mild and gives you all those Indian curry flavors in a 30-minute recipe with minimal ingredients. It’s also been a huge hit for everyone I’ve made it for, along with the other curries listed.

Spice mixes, soy sauce, oats, deli meat, salad dressings & sauces, and so many more packaged items have hidden gluten in them. Look for labels that state that what you are purchasing is certified gluten-free. For instance, oats are not suitable for celiacs unless they are labeled certified gluten-free like Bob’s Red Mill.

Yes, a roast dinner is great for someone who is gluten-free or celiac as long as no gluten or flour is added to the recipe. My roast recipes call specifically for gluten-free flour from Bob’s Red Mill, which is certified gluten-free, for a gluten-free gravy roast dinner.

Soup is the perfect go-to for easy gluten-free dinners. These recipes are thickened with potatoes and gluten-free thickeners like cornstarch and tapioca starch.

Each recipe has specific gluten-free options to look for, like taco seasoning or gluten-free mini lasagna noodles. Add one of my salad recipes to make these soups a ‘bigger’ meal.

Tips & Tricks

  • Gluten-Free Pasta Options – we use Jovial 100% brown rice pasta or Jovial as well as Tinkyada lasagna noodles. Brown rice pasta has the best texture overall, and any brand I’ve tried with a blend of gluten-free ingredients hasn’t been as good.
  • Gluten-Free Thickeners – I use Bob’s Red Mill 1:1 gluten-free blend for recipes like my Dutch Oven Beef Stew or Creamy Garlic Chicken . For other recipes, I use cornstarch or tapioca starch.
  • I like to make dinner recipes with naturally gluten-free ingredients as much as possible for the best results and texture. We don’t have recipes for gluten-free pizza crusts, etc., because I’ve never made one I wanted to repeat! However, we make my Pizza Chicken all the time, and it’s so good. So, if you’re looking for recipes that will be a hit with everyone at the dinner table, my personal recommendation is to stay away from gluten-free substitutes that often fall short.
  • Cooking from scratch is the easiest way to avoid hidden gluten you’ll find in all sorts of packaged foods, from soups to broth, salad dressings, spices, and sauces. If you make your own from scratch, you can use your own gluten-free ingredients, thickeners, etc.
  • And my final tip is to find brands for some of your favorites you can rely on, like a good source for sausage, gluten-free broth, and dressings/sauces like Primal Kitchen if you need something extra fast and don’t have time to make things from scratch.

These easy-to-make Taco Dinner Ideas are the perfect weeknight dinner or Taco Tuesday. All of these recipes are gluten-free, and there are lots of dairy-free options as well, so there’s a little something for everyone. Many of these taco recipes are budget-friendly but they’re also kid-friendly too. I grew up eating classic American-style tacos like most people I know and absolutely loved them! But as I got older and really into food, my taco world just continued to expand with all the options.

All my favorite options are below for taco-inspired dinners and taco combinations for chicken, beef, pork, and seafood.

We make taco bowls in our house more often than tacos, and you’ll find my tips below for how to turn any taco into a bowl.

Salsa of all kinds, guacamole, and some Fajita Veggies add so much to a taco night. Vary the salsa you make depending on the season. In the winter, I make mango and pineapple salsa, but also my Fire Roasted Salsa, which uses canned tomatoes.

  • Beef Barbacoa: Instant Pot Beef Barbacoa, Tortillas, Pico de Gallo, Guacamole, Shredded Cabbage or Sliced Radishes, and Cilantro,
  • Pork Tacos: Instant Pot Carnitas, Tortillas, Mango Salsa or Pineapple Salsa, Guacamole, Shredded Napa Cabbage, Crumbled Cojita Cheese

You can make any of these taco combinations into a taco bowl by piling them over steamed rice or sweet potatoes in place of tortillas.

Fish Taco Bowls– my favorite way to enjoy fish tacos at home!

Beans and rice both go well with taco dinners. You can serve cooked black beans, pinto beans, or refried beans. I like to serve my Cilantro Lime Rice for extra flavor. Chips, salsa, and guacamole also round out a taco night for pre-dinner snacking.

Entertaining with tacos is my favorite way to entertain because it’s so easy! Make taco meat, choose tortillas & rice for taco bowls, and add your favorite toppings and sauce. Put everything out buffet style and let each person mix and match their way into tacos or taco bowls.

My favorite taco memories growing up were from Saturday dinners. My parents owned a roller rink, and so on Saturdays, we would often get Taco John’s for dinner.

They knew the manager (who lived near the roller rink), and she would deliver our order decades before anything like DoorDash existed!
