I’ve been making these Easiest Garlic Roasted Green Beans as a quick and easy side dish to go with everything from Italian to Indian dishes!

These green beans are truly a case where the sum is much greater than the parts! I don’t even know how to explain the magic that happens. After all this side dish only has 3 ingredients, yet I have yet to meet a person who doesn’t love them.
These were even a hit with my nephews and niece when I served them with my Lazy Lasagna recently. You wouldn’t think the green beans would be the first thing to disappear in a meal like that, but that’s exactly what happened. I made 2 huge sheet pans full, and the 8 of us absolutely annihilated them.
The thing I find most interesting is that everyone always asks if there’s butter on them, and they can never believe there isn’t! This recipe barely qualifies as a ‘recipe’ since it only has green beans + olive oil + garlic powder. Then they’re seasoned with a bit of sea salt, and the magic happens in the oven.

The real secret to these green beans is the oven temperature
The oven temperature for this recipe is no less than 500ºF. So no… that’s not a misprint in the recipe below, the hot oven temperature is everything.
This whole recipe started as an experiment with how to make frozen veggies taste better. Every time I tried roasting them, I ended up with a watery mess in my pan with no browned bits in sight. Even worse, the green beans always overcooked when I tried roasting them, since they’re flash-cooked before being frozen.
So one day, I turned the oven to broil, and ended up with the most beautifully browned and perfectly roasted green beans. However, broiling was problematic because I often ended up burning the edges. And so that’s a very long way of saying that 500ºF turned out to be the sweet spot for roasting frozen veggies.

Let’s jump in and make this recipe step by step

Step 1: Start by preheating the oven to 500ºF and lining a baking sheet with parchment paper. Then spread the frozen green beans evenly across the parchment paper.

Step 2: Sprinkle evenly with the garlic powder, sea salt, and optional black pepper, then drizzle the olive oil over the top.

Step 3: Toss to combine, then roast until browned, 10-15 minutes. Serve immediately with your choice of main dish . My Instant Pot Lazy Lasagna has been a bit of a hit with these green beans. And I love them in my meatloaf meal prep, too!

Frozen veggies: 500ºF is perfect for creating nice browned veggies. Fresh veggies: 450ºF is a better temperature for cooking them properly as they brown. For larger/harder veggies like butternut squash, I find 425ºF to be perfect.
One more tip: Lastly, I just wanted to mention the sheer versatility of this side dish. Since they’re flavored with just garlic, you can serve them with almost anything. As I mentioned, anything Italian is great, but also consider other cuisines like Indian – these are great with my Butter Chicken or Bacon Wrapped Ranch Chicken too.
