
We drank several variations of Pina Colada smoothies while we were in the Caribbean on our honeymoon. Every island we went to had yet another version to try, and we were more than willing! Icy cold, refreshing drinks are the perfect antidote to the hot Caribbean sun, especially after an afternoon of snorkeling!
Meanwhile… back to reality in the great white north, it’s been in the negative temperatures and snowing by the foot here! So… it’s not like I need a cold drink, I just need a sunny memory! We celebrated our 5th anniversary this weekend with lots of great meals and no electronics, which was the perfect break from everyday life. Since we’re no where near the tropics this year, we made these smoothies and reminisced while we started plotting our next travel adventures!

Add all the ingredients into your blender and blend until smooth. If you happen to make this when it’s not absolutely freezing outside, add 1-2 cups of ice cubes for a frostier treat!

Most of the smoothies you get in the Caribbean are spiked with rum which adds some flair to an otherwise ordinary smoothie! I’ve replaced the rum in my recipe with ginger kombucha which gives you the flair, (an added zingy/zesty note) and more nutritional benefits!

4 cups fresh or frozen pineapple chunks
2 oranges, peeled (I used Cara Cara oranges)
1 cup coconut milk , from the can
optional: 1 cup ginger kombucha (1/2 a bottle)
1 – 2 cups ice if your fruit is fresh rather than frozen
Place all the ingredients in a blender and blend until smooth.
Notes
The ginger kombucha is optional, but it definitely adds flair! You can use 1 cup of water or apple juice if kombucha isn’t available.
